Asiago d’Allevo Stravecchio DOP is a semi-firm, aged, raw, cow’s milk cheese from Italy. Asiago 'Stravecchio' (meaning "very old") is aged for over 18 months and has a very hard and grainy paste. The interior of this semi-hard cheese is amber-colored with an intense, piquant taste. This aged Asiago d'Allevo is often grated as a table cheese for salads, soups, and pastas. Pairs well with Shiraz and Sauvignon Blanc. Cut cheese, up to 22 lb.
