Beluga Hybrid Caviar consists of a hybrid between the Beluga Sturgeon (Huso huso) and the Siberian Sturgeon (Acipenser baerii), it has very firm, large grains, a brownish-gray color, with a more buttery note than Beluga Sturgeon with a hint of earthiness and nuttiness of Siberian Sturgeon.

This high Beluga caviar price is readily explained under the circumstances. This product is harvested from the critically endangered Beluga (Huso Huso) fish, also known as the "European Sturgeon" native to the Caspian Sea basin. The overfishing and poaching of Beluga in its original environment have nearly led to its extinction, and eventually motivated the United States Fish and Wildlife Service to consider this species as critically endangered and thus to ban the importation of Beluga sturgeon caviar from the Caspian Sea basin starting in 2006. After this the Convention on International Trade in Endangered Species of Wild Fauna and Flora (CITES) suspended trade in Beluga caviar, allowing only very small amounts of this product to be sold on the international market.
Rarity of the fish and its roe on the market is one of the determining factors of higher caviar cost. It rather compensates the complexity of maintaining fish farms and manufacturing, without even hinting at any gastronomic vogue or any exclusivity.

Beluga (Huso huso) is the largest fish of the sturgeon family. Beluga can grow up to 24 feet and weigh 3460 lb and live up to 118 years. It is listed as “critically endangered” species on the IUCN Red List and strictly protected by CITES. Regardless of all the efforts made by the surrounding Caspian Sea countries, CITES and the IUCN to preserve natural stock, the wild population of Beluga is still declining. Its natural habitats are the basins of the Black, Caspian and Azov Seas. Beluga is completely extinct from the Black sea and its basin. Male beluga matures at the age of 10-15 years and females atthe age of 15-18 years and spawns every 3-4 years. Spawning period is April through June. In the wild beluga sturgeons feed on small fish - herring, gobies, roach, kilka, etc.
